Handpicked harvest, spontaneous fermentation of whole grapes with indigenous yeasts at low temperature (18°C) for over 20 days. Racking and spontaneous malolactic fermentation lasting 3 weeks, followed by further racking with very gentle 40-micron filtering and bottling without adding sulfites.

Handpicked harvest, spontaneous fermentation of whole grapes stomped with indigenous yeasts at low temperature (18°C) for 20 days. Pressing and spontaneous malolactic fermentation lasting 2 weeks with subsequent static decantation and 3 rackings. Very gentle 40-micron filterin and bottling without adding sulfites.
